Here's a simple recipe for making fish curry:
Ingredients:
- 1 lb fish fillet (use any firm white fish)
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp chili powder
- 1 tsp salt
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- 1 tbsp lemon juice
- Handful of chopped cilantro
Instructions:
Cut the fish fillets into bite-sized pieces and set aside.
Heat the vegetable oil in a large saucepan over medium heat. Add the chopped onions and sauté until softened, about 5 minutes.
Add the minced garlic and grated ginger and cook for another 2-3 minutes.
Add the turmeric powder, cumin powder, coriander powder, chili powder, and salt. Stir well and cook for a minute.
Add the can of diced tomatoes and bring to a simmer. Let it cook for 5-10 minutes until the sauce thickens.
Add the coconut milk and bring to a gentle simmer.
Add the fish pieces to the sauce and cook for 5-7 minutes until the fish is cooked through.
Add the lemon juice and chopped cilantro and stir gently.
